Sunflower honey

Each drop of sunflower honey is a reflection of the thousands and thousands sunny flowers of the Heliánthus ánnuus plant, which transfer their unique aroma, color and taste from the sun, water and nature of the fields. Sunflower is an important honey crop in Ukraine, and thanks to it, Ukraine has achieved such an outstanding performance in honey production. Not too intense taste and color indicators make it very popular in blending cards of packers and industrial technologies worldwide. Quickly crystallizes with fine grains. Color

The color of freshly extracted sunflower honey is brighter than when it crystallizes and becomes saturated with a warm mustard color. After crystallization on the surface whitish plaque – a crust of glucose is possible.

Aroma

The aroma is subtle, light, floral, with a possible nice apricot acidity, unobtrusive. After crystallization of the product becomes less intensive.

Taste

Not particularly strong taste with a slight bitterness, pleasant sweet honey taste. Immediately after consuming there is a light tickling sensation in the throat.

Buckwheat honey

Buckwheat honey is extremely popular in Ukraine for its intensive taste and color. One of the most valuable honey varieties due to rich nutrients content. This is 100% Ukrainian “Manuka”. Bees harvest it from a herbaceous plant of the Buckwheat family (lat. Polygonáceae), which is widely cultivated in Ukraine. When the field blooms, the incredible aroma is spread over kilometers, and it is preserved by bees in honey. Buckwheat honey crystallizes quickly. It is widely used in cooking because of its bright taste.

Color

Buckwheat honey can range in color from dark purple to black. In general, it looks like your average, amber-colored honey with a slight reddish tint.

Aroma

Strong, floral, very rich. The aroma combines the spicy fragrance of caramel, cinnamon, nutmeg, walnut.

Taste

Buckwheat honey can be recognized by its unique taste – it is bitter and has a tart aftertaste. After tasting, a slight tickle may occur in the throat.

Acacia honey

The most exquisite and noble kind of honey, collected in Ukraine. It cannot be compared to any other honey either in taste, consistency or price. It is collected by bees from May to June during the flowering period of Robinia (lat. Robínia pseudoacácia). Its capacity to remain in a liquid state for a long time, combined with its light color, gives it a great commercial appearance. Іt іѕ rеаdіlу аbѕоrbеd bу thе bоdу. Color

White acacia honey in the liquid state is transparent and when crystallized becomes white with a fine grain structure. Yellow acacia honey is lighter, almost transparent, with a light greenish tinge.

Aroma

The noble, subtle and unsurpassed aroma of acacia flower

Taste

The taste is very tender, pleasantly sweet. In acacia honey, bitterness is completely absent. Has an intensive sweet aftertaste.

Rapeseed honey

Rapeseed is a kind of annual herb that belongs to the Brassicaceae family and is widely cultivated in Ukrainian agriculture. Bright yellow flowers of this wonderful plant are used by bees to collect delicious rapeseed honey. It crystallizes quickly and becomes a plastic white color, similar to cream honey in consistency. Contains significant amount of glucose that has reinforcing properties. Like all honey, rapeseed honey has a great antiseptic and bactericidal capacity. Components of rapeseed provide this honey with energizing and purifying properties. Widely used in blending for lighting of dark honey and in mono-floral consumption.

Color

White to cream, yellowish

Aroma

Very delicate flavor with low acidity, fruity notes. With a very characteristic rich, harsh smell.

Taste

Peculiar, sweet with a very slight but pleasant peppery aftertaste.

Linden honey

Linden honey is perhaps the first honey that a person has started consuming. Since ancient times, it is appreciated for its beneficial medicinal properties, which it acquires due to the linden tree. The unique set of useful elements in the nectar of linden flowers and the large amount of pollen make it a very valuable and is desired by many on the table. It is easy to recognize among other honey. Due to the aroma of linden flowers, it acquires a stable aromatic and linden taste. Linden honey has a wide range of applications, it is primarily used for treating colds and fevers as a diaphoretic, and it is used as a fortifying agent and supports the heart.  The crystallization rate is medium to fast with fine to medium sized crystals. 

Color

Pale yellow, amber, greenish when very fresh and almost white after crystallization.

Aroma

The fragrant aroma, repeats the smell of linden flowers, there are wooden notes, with light mint tints, there are also balsamic notes in its aroma.

Taste

It has low acidity, medium sweet and sometimes a light bitterness. It has a persistent aftertaste and is slightly astringent.

Polyfloral honey

Ukraine, with its large geographical area and diversity of landscapes, is rich in a variety of flowers which is а perfect basis for collecting of polyfloral honey. What is most charming about polyfloral honey varieties is their uniqueness in each combination. In Ukraine can be identified Carpathian polyflora, collected in the mountains, steppe or meadow polyflora from the central and southern regions, forest and marsh grasses polyflora of northern regions. This diversity is usually impacted by widespread agricultural crops – such as rapeseed and sunflower, which as a result dominate in the Ukrainian polyfloral honey. This type of honey is highly appreciated for its rich flavor profile, nutritional and medicinal qualities as well as higher content of minerals compared to most monofloral honeys.  Each nectar in its composition brings elements with a unique therapeutic action, making polyflora honey delicious and healthier option.

Color

The Ukrainian polyflora is brightly saturated with the colors of the dominant flora. Spring is lighter, with impurities of acacia, clover, raspberry. Later honey can vary from light amber to darker tones.

Aroma

Very fragrant, reflecting flowering fields, wild forest flowers

Taste

Dominant sweet, sometimes with bitter notes
